Directions

Cook the aromatics

Heat oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Season with salt and pepper. Stir in garlic, rosemary, and thyme. Cook until fragrant, 1 minute. Remove from heat and let cool slightly.

Mix the meatloaf

In a large bowl, mix ground turkey, breadcrumbs, milk, Worcestershire sauce, egg, and cooked vegetables until combined. Season with salt and pepper.

Shape & glaze

Grease the roaster insert pan with cooking spray. Form the meat mixture into a loaf in the center of the pan. Mix ketchup and brown sugar in a small bowl. Brush over the loaf.

Preheat

Put the lid on. Set to 300°F. Preheat for 20 minutes.

Bake covered

Cover with the lid. Bake at 300°F for 50–60 minutes. Start checking the internal temperature at the 50-minute mark. The meatloaf is ready for the next step when it reads 150°F. The roaster's steam keeps the meatloaf moist. Don't open the lid during this phase.

Caramelize the glaze & serve

Remove the lid. Increase to 400°F. Bake uncovered for 10 minutes until the glaze is sticky and caramelized and the thermometer reads 160°F. Let rest 10 minutes before slicing. Serves 6. Keep the lid off during this step so the glaze sets instead of steaming off.
