Directions

Prep the pan

Spray an 8x8-inch baking dish with cooking spray. Slice baguette into ½-inch slices, arrange in single layer.

Make the custard

Whisk together eggs, egg whites, milk, and vanilla. Pour over bread.

Add the peaches

Toss peaches with lemon juice and 1 Tbsp. brown sugar. Scatter evenly over bread.

Top it off

Mix remaining brown sugar and cinnamon. Sprinkle over top. Cover with foil, refrigerate overnight.

Set up the bake

Place rack in slow cooker. Add 5 cups water to pot (don't go below this level). Set baking dish on rack.

Bake it

Cover with lid. Select Bake (350°F), 40 minutes.

Serve it

Top with vanilla yogurt, maple syrup, and Canadian bacon.
