Directions

Make the glaze

Mix honey, butter, mustard, onion powder, paprika, pepper, cinnamon, ginger, cloves, and nutmeg in a small bowl.

Prep the ham

Place the ham fat side up on the roaster rack. Baste all over and between the slices with half of the glaze. Pour about ¼" of water into the insert pan. Wrap the ham in foil.

Preheat

Put the lid on. Set to 300°F. Preheat for 20 minutes.

Bake covered

Cover with the lid. Bake at 300°F for about 1.5 hours, until the thermometer reads 130°F. Check the water level halfway through. Add more if the pan looks dry. Start checking temperature at the 1 hour 15 minute mark — the roaster may reach 130°F faster than expected.

Glaze & caramelize

Remove the foil. Increase to 400°F. Baste ham with half of the remaining glaze. Bake lid-off for 10 minutes until the glaze is bubbling and tacky. Keep the lid off during this step so the glaze can caramelize instead of steam.

Add sugar crust

Baste with the remaining glaze. Pack granulated sugar all over the surface. Bake lid-off for 10 more minutes until the thermometer reads 145°F and the sugar has formed a crunchy caramelized shell.

Rest & serve

Let cool slightly. Transfer to a platter and serve. Serves 12–16.
