Directions

Brine chicken

Mix buttermilk and 2 Tbsp salt in a large bowl. Add chicken, cover, and refrigerate at least 2 hours (overnight is even better).

Mix waffle dry ingredients

Preheat oven to 200°F. Whisk flour, sugar, baking powder, baking soda, and a pinch of salt in a large bowl.

Mix waffle wet ingredients

In another bowl, whisk sour cream, milk, melted butter, and egg yolks. Fold into dry mixture.

Whip egg whites

Beat egg whites until stiff peaks form. Gently fold into batter. Don't overmix—some fluffy white streaks are fine.

Cook waffles

Heat waffle iron and brush with butter. Add ⅓ cup batter and cook until golden, about 5 minutes. Keep waffles warm in a towel on a baking sheet in the oven. Repeat with remaining batter.

Heat oil

Fill Dutch oven with 2-3 inches of oil. Heat to 350°F. Set up a wire rack over a paper towel-lined sheet pan.

Prep chicken

Pull chicken from brine and pat completely dry with paper towels. Season generously with salt and pepper.

Bread and fry

Whisk flour, paprika, cayenne, salt, and pepper in a deep bowl. Beat eggs with 2 Tbsp water in another bowl. Dip chicken in egg, dredge in flour, shake off excess. Fry in 2 batches until golden and cooked through, 6-8 minutes (165°F internal). Let oil return to 350°F between batches.

Finish and serve

Transfer chicken to wire rack and salt immediately. Plate waffles with butter, top with 2-3 pieces of chicken. Drizzle with maple syrup.
