Directions

Preheat

Put the lid on. Set to 450°F. Preheat for 25 minutes.

Sear the pork

Add oil to the insert pan. Season pork with salt and pepper. Add to the pan — lid off. Sear at 450°F, turning every few minutes, until browned on all sides, about 15 minutes. Move pork to one side of the pan.

Cook aromatics

Add onion and garlic to the empty side of the pan. Cook at 450°F, lid off, until softened, about 8 minutes. Add sundried tomatoes and seasoning mix. Cook 2 more minutes, stirring often.

Build chili

Pour in the beer and scrape up any browned bits from the bottom. Let it simmer at 450°F, lid off, for 5 minutes. Add broth, crushed tomatoes, and kidney beans. Stir everything together. Nestle the pork back in. Put the lid on. Turn it down to 225°F.

Slow cook

Cook at 225°F for 4-5 hours. Don't lift the lid. The pork is ready when it falls apart with a fork.

Shred the pork

Pull the pork pieces out. Shred with two forks. Stir back into the chili until well mixed.

Serve

Ladle into bowls. Top with shredded cheddar, sour cream, and green onions. Serve with cornbread on the side.
