INGREDIENT

4 oz brown rice noodles
1 zucchini
1 red bell pepper
2 carrots
1 egg
1/2 cup green onion
1/3 cup peanuts
For Sauce:
1 tbsp fish sauce
1 tbsp coconut sugar
3 tbsp water
2 tbsp rice vinegar
1 tbsp soy sauce
1 tsp chili paste
 

INSTRUCTIONS(STEPS)

  1. Spiralize veggies or slice into thin strips. Prepare sauce. Whisk egg.
  2. Heat wok to about 300°. Add veggies and a tiny bit of oil to the electric wok. Saute until softened and add brown rice noodles. Toss with sauce. Move veggies and noodles to the side, and pour in egg, letting it sit for about 30 seconds or until it cooks on its own.
  3. Toss egg in with the veggies and noodles. Toss in peanuts and green onion.
  4. Serve and enjoy!
